Clasificare Proteine

Valoarea biologica a unei proteine este determinata de prezenta sau lipsa unor aminoacizi din proteine.In functie de valoarea biologica,proteinele din alimentatie se clasifica in mai multe grupe:

  • proteine complete(care contin toti aminoacizii esentiali in proportii optime pentru sintetizarea proteinelor din organism):laptele,branzeturile,carnea si ouale
  • proteine partial complete(care contin toti amioacizii esentiali,dar nu in proportii optime pentru sintetizarea proteinelor in organism):graul,orzul,ovazul,anumite plante leguminoase uscate
  • proteine incomplete(care au o valoare biologica scazuta datorita lipsei unor aminoacizi esentiali si care nu pot asigura sintetizarea proteinelor in organism.
